We caught up with Romaric, Head Chef at Eden Rock Villa Rental, to learn more about his culinary inspirations and the passion he brings to the table.
What inspired you to become a chef?
My passion for cooking came at a very young age. Growing up in an Italian family, cooking was an important part of our everyday life. My grandparents were my first major influence and I often observed them cooking for the entire family. Everything was always delicious and exceptionally prepared, and it gave me an appreciation for quality ingredients, prepared with heart and generosity. For me, that is the essence of our job as chefs — the desire to see happiness in the eyes of the people for whom we cook.
In terms of my career trajectory, I have cooked around the world, from the slopes of Courchevel and Switzerland to the sea and sun of Corsica. At 24, I decided to expand my horizons and fly to the South Pacific, which took me from Bora-Bora to Hawaii, where I worked in some of their magnificent luxury hotels. My goal was to learn about other cultures and styles of cooking with exceptional chefs like Jean-Christophe Basseau, Gille Arzur, Nicolas Boutin and Massimo Falsini, who helped me discover my culinary identity and my rigour. Eden Rock has welcomed me for nearly four years now, and here I am in charge of overseeing the talented team of private chefs.
What is a day in the life of a private chef?
As private chefs, we have the privilege of being in direct contact with the guests, to witness their reactions and adapt to their taste for an ultra-personalised menu. Some guests even choose to work with a private chef throughout their entire stay. We start with breakfast that can include anything from healthy homemade granola to tasty pastries, casual barbecues for lunch, and late afternoon cocktails and snacks until dinner. We can also organize banquets for celebrations. St Barths is perfect destination to gather with family and friends and celebrate a birthday, a wedding anniversary or even a marriage proposal.
What are your inspirations?
We all bring a special background, but first and foremost, we work and adapt around the guests’ tastes and preferences. We are fortunate to live and work in the Caribbean, where we can benefit from amazingly fresh ingredients. For example, we have excellent fishermen who provide us with ultra-fresh fish and lobster to prepare the catch of day in multiple ways, whether its mixed into a tangy tartare or grilled to perfection.
My travels far and wide have influenced some of my signature dishes. I really enjoy working with ravioli: it is technical and offers a way to concentrate a lot of flavour into a small bite. My signature dessert is inspired by the pineapple piña colada. The sweet mélange of pineapple and coconut is always a crowd pleaser.
