Sweetness for Spring from Brenners: 3 Homemade Ice Cream Recipes

Brenners Park-Hotel & Spa is lucky to have an award-winning Apprentice Chef, Viktoria Lund, on the team. Vickie won the Baden-Wurttemberg Youth Championship for cooking last year and joined the Junior Team Germany at this year’s 25thannual Culinary Olympics in Stuttgart. Needless to say, the young chef’s future is bright!

Today, Vickie shares 3 original ice cream recipes that are simple to make at home. Two are vegan and can be made using a blender. The third is a more traditional recipe and works best in an ice cream maker but can be made by hand if you have the patience! Here’s how these sweet treats are made…

Very Berry Nice Cream

Vegan, no refined sugar

 

A delight if you’re craving something smooth and sweet but also healthy!

Serves 6

 

Ingredients

4 frozen bananas, sliced
500g cold strawberries (substitute your favourite berry or berries), halved
1 vanilla bean, scraped
1 Tonka bean, scraped
Vegan white chocolate and berries for garnish

Method

Place banana, berries and vanilla in a blender. Grate the Tonka bean overtop and blend until smooth. Pour the mixture into a piping bag and serve in ice cream dishes. Garnish with grated white chocolate and berries.

Coffeeholic Nice Cream

Vegan, no refined sugar

 

This one provides a boost of caffeine for a busy afternoon of work, kids and, well, life!

Serves 4

 

Ingredients

4 frozen bananas, sliced
4 shots of espresso, cold
2 tbsp raw cacao powder
4 tbsp maple syrup
Cacao nibs and vegan whipped cream for garnish

Method

Place all the ingredients except for the garnish in a blender and blend until smooth. Serve in coffee mugs and garnish with whipped cream and cacao nibs.

Curd-Lime Ice Cream with Honey

A rich and refreshing treat!

Serves 4

 

Ingredients

250 g milk curd or skyr
1 lime (juice and zest)
4 tbsp honey (more or less according to preference)
400 g whipped cream
Daisies or other edible flowers and honey for garnish

Method

Mix the curd/skyr with the lime juice, zest and honey. Carefully fold in the whipped cream. Pour the mixture in an ice cream maker, if you have one, to cool and stir at the same time. If you don’t have an ice cream maker, place the mixture in the freezer to cool and remove it to stir with a whisk periodically. Serve in ice cream dishes and garnish with honey and edible flowers.
