Here, we’re offering you both recipes so you can recreate a São Paulo and French Riviera style aperitif right at home.

Palácio Tangará’s Boulevardier
40 ml whiskey
30 ml Campari (Italian bitters)
30 ml red vermouth
Stir in a tumbler filled with ice. Garnish with a swirl of orange peel and savour slowly.
Hotel du Cap-Eden-Roc’s Bellini
2-3 peaches (they’re white traditionally, but any peach will do!)
Juice of ½ a lemon
1 tsp. simple syrup (stir 1 part sugar with 1 part water, boil, cool)
Your favourite Champagne or Prosecco
Mash or blend peaches to create a puree. Stir in lemon juice to prevent oxidation and simple syrup to balance the acidity. Fill glasses half full of the peach mixture and top with your chosen sparkling wine. Garnish with a peach slice on the edge of each glass and enjoy!
