A much-appreciated member of the team for the past nine years, head bartender Mathieu takes time out to describe the heady world of mixology at Eden Rock – St Barths.
A dedicated fan of travel, Mathieu has a taste for exoticism that he loves to share with his clients. This new place offers a concept for those in search of cool ideas and original experiences. “Serving cocktails in amusing containers adds an extra touch of enjoyment,” says the mixologist. “This season’s offerings include the Free in St Barths served in a Pelican shaped figurine – the emblem of the island – and very original glasses. Our cocktails are also enhanced by fresh fruit squeezed at the very last minute.”
Equally passionate about travel, members of Mathieu’s team of mixologists bring back their own discoveries on how to conjure up different tastes. Inspiration for new cocktails also comes from local ingredients, with favourite blends mixing and matching ground coconut, passionfruit, pineapple, cinnamon, Tonka beans and Jamaican pepper.
“Rare alcohols also play an important part in providing quality and privilege for our clients,” explains Mathieu. “We can treat them, for example, to Chivas Icon whisky, Havana Maximo rum, and a rare mathusalem of Louis XIII cognac.”
