New Year’s Resolution Dessert: Mango-Coconut Chia Pudding

It’s January and motivation is running high to be the best version of you. If making healthier food choices is one of your New Year’s resolutions, take a page out of Villa Stéphanie’s proverbial cookbook with this deliciously (but not overly) sweet mango-coconut chia pudding. After all, the historic spa hotel in Baden-Baden, Germany is a place where that January motivation never runs out.

Here’s how it’s made…

Ingredients

1/4 cup chia seeds
2 tbsp. shredded unsweetened coconut
1 & 1/4 cup light coconut milk
1 tsp. vanilla extract
1 tbsp. maple syrup
1/2 mango

 

Method

Mix chia seeds, shredded coconut, coconut milk, vanilla and maple syrup together in a bowl and leave to sit on the counter for 10 minutes, giving it a stir every 2-3 minutes. Then, cover the bowl and place in the refrigerator to firm up for 1-2 hours. When ready, remove from the refrigerator, add the sliced mango
and enjoy! The pudding can be stored in an airtight container in the refrigerator for up to one week.
