The scope of Paris’s ‘bistronomy’scene is ever-widening, especially with the recent addition of a cozy yet innovative address by a multi Michelin-starred chef. Hélène Darroze of Top Chef fame has chosen the vibrant Sentier area for her new restaurant which comprises a ground floor dining room and a little upstairs bar.
Outside of the gastronomy’s exacting rulebook, Hélène has chosen to share her family recipes in this latest venture. Largely from the south-west and Basque region, local products are championed, as well as the area’s signature spice: Espelettepepper. Epitomising her native region, Darroze puts the generosity and conviviality back into cuisine with simple yet perfectly-executed dishes. Jòia means ‘joy’in Occitanand this chef has certainly found the recipe for happiness.
